Fresh food on a long-distance hike is a rare treat, which makes this flavor-packed veggie salad the next-best thing—and a top pick among our tasters. This refreshing vegan, gluten-conscious dish features five kinds of beans (red, black, garbanzo, edamame, string), along with sweet peppers, onions and fire-roasted corn in a tangy, balsamic vinaigrette dressing. Plus, each 6-ounce serving provides a powerhouse of calories, carbs and protein to help you keep moving on your big, after-lunch push. Prep takes a while to rehydrate, so we recommend preparing in the morning before breaking camp and letting it marinade in your pack while you hike. Then, whenever you’re ready, just find a lunch spot, break it out and dig in!

frequently asked questions
If using cool water, rehydrating legumes (such as beans) can take quite a long time! We recommend adding your water to the dish in the morning for a tasty lunch down the trail. Or, you can use hot water and reduce your wait time to about 20 minutes.

This is just "Too Good to be True" ! I can't believe its freeze dried & dehydrated. It's so good that I'm ordering some to have on hand at home. Honestly this is the best bean salad ever. Hats off to the chef !

I have had good experience with this meal in the last (and all other meals I’ve tried); however, after carefully following the preparation instructions at 8000 feet, some elements of the meal remained crunchy. Big’un Burritos will remain my standby meal :)

WOW! I'll be honest, I didn't think I'd like this. I'm very picky about texture and didn't expect these beans to rehydrate as well as they did. We put the water in just as we headed out for our day hike. We ate it about 3 hours later. HOLY SMOKES, it was amazing!!! There was not one bean that didn't taste fresh, the juice was sweet and flavorful. I'm logged back in to buy several more of these. I'll leave one in my work desk and look forward to my next hike because I'll be eating well. OH - we shared this for lunch. It was alot of food. I don't think I could have finished it all by myself, except that it tasted to yummy I might have shoveled it all in and taken a nap. BUY IT!

Superb, albeit a bit heavy for a UL backpacker. Just makes me want to eat it earlier in the trip so I don't have to carry it!! Broke this out on a recent trip and the guys I was with thought I was crazy... until we stopped for lunch and I shared it with them!! Easy to make, ready to go when lunch/rest break comes up. Soooo tastey!!

This salad is so good, I buy extra so I can eat it at home, too!

This meal is absolutely fabulous! This rehydrated to be as fresh as something I might have just bought at my local deli and what flavor. The fact that I don't have to cook and the meal is ready when I get my destination - awesome!

We tried out the many beans salad and the cheese spread today. Impressive! Never before has any prepackaged food tasted better than what I've made myself. Great job! Just put in another order. Yummy!

I ordered this for a week long section hike on the AT. I was skeptical about how satisfying this would be on the trail. I divided the single serving into two before I left for the trail, I can't eat more than 8 ounces for lunch. I prepared this in my 8 oz screw top nalgene in the morning, and by lunch, I had a wonderful, tasty, light, energy providing meal. I loved it and will bring it on every trip. I dehydrate most of my food, but veggies always rehydrate "hard". Freeze dried is the way to go, and Packitgourmet is the queen of backpacking meals!

My buddy and I made this on a recent AT section hike. We stopped for water mid-morning and started it soaking... it was ready for a lunch and really hit the spot. It was the first time we had eaten any meals from Packit Gourmet and we agreed it would not be the last.
